Serves 6-8

150g/5oz Madeira cake

113g/4oz ripe purple Wonderberries

57g/2oz Raspberries

113g/4oz Blueberries

2 Bananas

2 Fresh Figs

1 Satsuma

200g/7oz Fromage Frais

170g/6oz Whipping Cream

2 sachet of Blueberry Jelly

425g/15oz Custard

Place cake in slices at bottom of glass/crystal serving dish – Wash, peel and slice bananas, figs & satsuma. Lay over cake.

Sprinkle washed berries on top (keep a handful of Wonderberries for garnish). – Make up jelly when cool (but not set) pour over fruit and allow to set, then add layer of custard mixed with fromage frais.

Whip cream, place on top in even peaks and sprinkle Wonderberries on top.

Wonderberry Jelly

Serves 6-8

57g/2oz Vodka

1 Blueberry Jelly

1 packet of Gelatine

228g/8oz Wonderberries

Make up the jelly, add gelatine & Vodka, pour into small single serving cups or shot glasses. When cool sprinkle in Wonderberries and allow to set.

Summer Salad

Serves 6-8

8 cherry tomatoes

57g/2oz Ripe Wonderberries

½ Cubed Cucumber

28g/1oz Chopped Chive

57g/4oz Baby spinach

1 Cubed Avocado


1oz Hazelnut Oil

1oz Lime Juice

1 teaspoon of Honey

1 crushed Garlic Clove

Salt & Pepper

4 drops of Tobasco sauce
