30ml / 1 oz Grand Marnier

30ml / 1 oz Baileys

30ml / 1 oz Kahlua

5 ice cubes

Shake all the ingredients with the ice and serve in a lowball glass.

Or alternatively, arrange in 3 separate layers.

Casablanca Cocktail


90ml / 3 oz white rum

30ml / 1  oz cherry liqueur

30ml / 1 oz triple sec

30ml / 1 oz lime juice

1 lime slice

Shake all the ingredients with cracked ice. Pour into a cocktail glass.

Mai Tai


30ml / 1 oz White rum

30ml / 1 oz Dark rum

15ml / ½ oz part Amaretto

15ml / ½ oz Apricot brandy

15ml / ½ oz Orange curacao

15ml / ½ oz lime juice

top up pineapple juice

5 ice cubes

Mix everything together (except the pineapple juice) and pour over the ice into a highball glass. Top up with pineapple juice.

Moscow Mule


15ml / ½  oz lime juice

60ml / 2 oz vodka

120-180ml / 4 – 6 oz ginger beer

Squeeze lime juice into a Collins glass (or Moscow Mule mug) and drop in the spent shell. Add 2 or 3 ice cubes then pour in the vodka and fill with cold ginger beer.



60ml / 2 oz London dry gin

1 1/2 teaspoons apricot brandy

30ml / 1 oz orange juice

15ml / 1/2 oz lemon juice

Shake well with cracked ice, then strain into a chilled cocktail glass.

Strawberry Daiquiri


60ml / 2 oz White rum

30ml / 1 oz Crème de fraises

30ml / 1 oz lemon juice

Ice (crushed)

4 strawberries

Pour the rum, Crème de fraises, lemon juice, strawberries and ice into a blender and process at slow speed for 5 seconds, then at high speed for 20 seconds. Pour into a chilled glass.

Tequila Sunrise


45ml / 1 ½ oz  tequila

120ml / 4 oz orange juice

15ml / ½ part grenadine

Mix tequila and orange juice in a glass, then pour the grenadine in GENTLY so that it falls to the bottom.

White Russian


60ml / 2 oz Vodka

30ml / 1 oz Kahlua

Top up cream

5 ice cubes

Shake the vodka and Kahlua together. Pour over ice and then top up with cream.

Wonderberry Chambord Dream


6 Wonderberries

4  raspberries, plus more for garnish

1 tablespoon half-and-half

60ml / 2 oz Chambord

1 splash simple syrup

30ml / 1 oz vodka, Crystal Head

Muddle the berries in to a cocktail shaker glass. Add half-and-half, Chambord, simple syrup, vodka and ice. Shake until well chilled. Strain into a martini glass. Garnish with the excess berries.

Wonderberry Cider


2 litres / 64 oz apple cider

85g / 3 oz of Wonderberries

110g / 4 oz of blackberries

7 orange wheels

4 dashes ground cinnamon

2 star anise

6 cinnamon sticks

Remove 6 blackberries and set aside. Bring apple cider, remaining blackberries, wonderberries, orange slices, cinnamon and star anise to a boil in a large sauce pan. Let it simmer until the blackberries lose their colour. Strain and transfer to a pitcher or a bottle. Serve hot or chilled. Garnish with blackberries, cinnamon sticks and orange slices.

Wonderberry Mojito


6 Wonderberries

12 Blackberries

12 large mint leaves

4 teaspoons sugar

1 tablespoon fresh lemon juice

1 tablespoon fresh lime juice

120ml / 4 oz cups seltzer water

60ml / 2 oz cups vodka or rum

6 to 8 ice cubes

Muddle the berries, mint leaves, sugar, lemon juice and lime juice in a tall glass until the berries are mostly crushed. Add seltzer, Vodka and Ice. Stir well and serve.

Wonderberry Sangria with Prosecco


30g of Wonderberries, blackberries, and raspberries.

30ml / 1 oz lemon juice

30ml / 1 oz simple syrup

45ml / 1 ½ oz Midori liquor


45ml / 1 ½ oz Prosecco

Muddle berries, lemon juice and simple syrup in a cocktail shaker. Add Midori. Top with several ice cubes and shake vigorously. Pour into a chilled wine glass. Top with Prosecco, stir and garnish with a few berries.
